This soup is best served with pounded yam, fufu or eba. Egusi soup and pounded yam is such a mouthwatering dish to set eyes on. The egusi soup is usually thickened with ground melon seeds. The pounded yam is made by boiling skinned yam and then pounding it into a mash, which you can then shape as desired. Alternatively, you can use processed yam flour which may be bought from an African Caribbean Food Store. To prepare the processed yam flour, start by stirring the yam flour in boiling water then continue stirring and adding more yam flour till thickened. Once thickened and bring down the heat from your cooker and serve with egusi soup.
